Copycat Chipotle Corn Salsa
Copycat Roasted Corn Salsa
- 4 ears of fresh sweet corn
- 1 red onion
- 1/2 c of fresh cilantro
- 2 limes
- 2 cloves of garlic (my boyfriend loves garlic so I up’d it. 1 clove is just fine)
- 2 jalapenos.
- Freshly ground sea salt (to taste)
- Freshly ground multi-colored peppercorns (to taste)
- Shuck all 4 ears of corn, ensuring all fibers and annoying things that get stuck in your teeth while eating corn on the cob are gone. Once cleaned, place the ears of corn either in a skillet on the stove or grill. Heat for about 5 minutes until corn becomes colorful and there is some browning.
- While letting the corn cool, clean and remove the seeds of 2 jalapenos. Chop into bite-size pieces and put in a bowl. Slice 4 medium sized pieces of onion and chip into bite size pieces and add to jalapenos. Mince garlic and add to mixture.
- Chop cilantro and add to corn and jalapeno bowl. Juice 2 limes thoroughly into the mixture.
- Combine all ingredients together and serve warm or chilled!
